Eggplant Roll-Ups

An easy app to whip up for all the summer parties you’ll be frequenting OR just a simple salty snack for yourself.


Yields: 4-6 servings as an app

1 large eggplant

¼ cup goat cheese

½ cup assorted olives

½ cup cherry tomatoes

Balsamic glaze


  1. Preheat oven to 400 degrees.

  2. Slice eggplant into rounds.

  3. Spritz baking sheet with olive oil.

  4. Cook eggplant for 5 minutes on each side until lightly golden brown.

  5. Sprinkle eggplant with salt and pepper and let cool.

  6. Once cool at a dollop of goat cheese to center of the eggplant and either an olive or tomato. 

  7. Roll up and stick a toothpick through the middle piercing the olive or tomato to keep the roll together.

  8. Continue with remaining ingredients alternating olives and tomatoes.

  9. Drizzle with balsamic glaze if desired.
