An easy app to whip up for all the summer parties you’ll be frequenting OR just a simple salty snack for yourself.
Yields: 4-6 servings as an app
1 large eggplant
¼ cup goat cheese
½ cup assorted olives
½ cup cherry tomatoes
Preheat oven to 400 degrees.
Slice eggplant into rounds.
Spritz baking sheet with olive oil.
Cook eggplant for 5 minutes on each side until lightly golden brown.
Sprinkle eggplant with salt and pepper and let cool.
Once cool at a dollop of goat cheese to center of the eggplant and either an olive or tomato.
Roll up and stick a toothpick through the middle piercing the olive or tomato to keep the roll together.
Continue with remaining ingredients alternating olives and tomatoes.
Drizzle with balsamic glaze if desired.
