A super simple and delicious way to prepare beets, inspired by one of my best friend’s mama recipes. This side dish brings me back to their happy little hut in Haiku, Maui.
Yields: About 4 as a side
2 raw beets
1 cup coconut milk
1 tsp curry powder
2 tbsp fresh ginger
S + P
2 tbsp unsweetened coconut flakes /shredded unsweetened coconut
Scrub and peel your beets.
Peel your ginger.
Add beets to a large pan with a lid with about 2 cups of water.
Cook the beets until just tender, about 20 minutes.
At 15 minutes add your peeled, chopped ginger.
Remove any excess water from the pan and add the coconut milk.
Continue to simmer for about 10 minutes until beets are tender and the coconut milk has reduced.
Add the curry powder and S + P to taste.
Garnish with coconut flakes and serve.
