Arugula Parm Salad

My favorite salad of all time actually comes from an Italian / pizza spot in Greenwich Village, NYC -- Arturo’s. Arturo’s makes the most amazing arugula parm salad and it’s the perfect pairing to their amazing coal fired pizza. I love you Arturo’s, please forgive me for my attempt to recreate your inspirational salad.

Ingredients:
Yields: About 4 servings as a side salad

1 bag arugula

3 ounces parmesan

Dressing:

2 tbsp olive oil

¼ cup champagne vinegar

S + P

Pinch of red chili flakes

½ squeeze honey

  1. Wash and dry your arugula greens then place them in a large salad bowl.

  2. Grate your parmesan in large thick curls and add to the arugula.

  3. Add all dressing ingredients to a large mug and whisk together.

  4. Add dressing to greens and parm and toss well.

  5. Serve immediately.
