Oven Roasted Sweet Potato Fries

The humble and versatile sweet potato takes on fry form in this classic recipe.

Ingredients:
Yields: 4-6 servings (as a side dish)

4-6 medium sized sweet potatoes; scrubbed well

Generous drizzle of olive oil

s+p

2 tbsp brown sugar

Preheat oven to 415 degrees. Slice the clean sweet potatoes in long, thin slices that resemble fries.

Once all potatoes are cut transfer to large baking sheet(s).

Toss potatoes with oil, add s+p and brown sugar.

Toss well until nicely coated.

Bake at 415 for 15 mins.

Remove from oven and flip.

Return back to oven and bake for additional 15-20 mins. until fries are nice and crispy.

Serve with ketchup or condiments of choice!
