Bacon Wrapped Cheesy Asparagus
Asparagus and bacon are brought together with dates and chunks of parmesan cheese. I don’t eat bacon but I am constantly reminded how AMAZING it is by every meat-eater I know and my friend Laura who considers herself a “porkatarian.”
This recipe can be kind of tricky to get everything to stay together so try your best, if all else fails it will still taste good.
Yields: 6 servings
12 thick asparagus stalks
12 medjool dates
12 small chunks of good parmesan cheese
drizzle of olive oil
Preheat oven to 400.
Place asparagus stalks on large baking sheet, drizzle with olive oil and bake for 5 mins.
Meanwhile halve dates leaving a small portion of the fruit attached, making somewhat of a mouth with the fruit to clamp onto the asparagus.
Remove asparagus from oven and let cool.
Working one by one take a piece of bacon and wrap around asparagus stalk.
Tuck a piece of parmesan inside the date and clamp on to the asparagus to keep the bacon in place.
Place the asparagus down back on the baking sheet with the bacon tail tucked underneath.
Repeat with remaining ingredients.
Return asparagus to oven for 10 minutes until parmesan is melted and bacon is fragrant.
