Zucchini and Corn Fritters

Gluten-free zucchini and corn fritters that only taste indulgent.

Yields: About 15 fritters

2 c. shredded zucchini

2 c. frozen corn; defrosted

½ c. cornmeal

½ c. almond meal

2 eggs

2 garlic cloves, minced

1 c. chopped cilantro


  1. Shred and drain zucchini well.

  2. Combine all ingredients in bowl.

  3. Drizzle saute pan with olive oil, turn on the stove top.

  4. Once the pan is hot fry cakes ¼ c. batter at a time.

  5. Cook 3 minutes each side.

  6. Serve fritters hot with sour cream or ketchup.
