Zucchini and Corn Fritters
Gluten-free zucchini and corn fritters that only taste indulgent.
Yields: About 15 fritters
2 c. shredded zucchini
2 c. frozen corn; defrosted
½ c. cornmeal
½ c. almond meal
2 garlic cloves, minced
1 c. chopped cilantro
Shred and drain zucchini well.
Combine all ingredients in bowl.
Drizzle saute pan with olive oil, turn on the stove top.
Once the pan is hot fry cakes ¼ c. batter at a time.
Cook 3 minutes each side.
Serve fritters hot with sour cream or ketchup.
