Inspired by a complimentary ginger granola bar given to me on an Aer Lingus flight I took last summer.
Yields: 4ish cups of granola
3 cups rolled oats
½ cup shredded coconut
½ cup roasted cashews
¼ cup sesame seeds
¼ cup chia seeds
¼ cup molasses
⅓ cup honey
½ cup melted coconut oil
1 tsp salt
1 tsp ground ginger
½ tsp ground cinnamon
Preheat the oven to 300 degrees.
Line a baking sheet with parchment paper.
Whisk together the coconut oil, honey, molasses, salt, ground cinnamon and ground ginger.
Gently fold in the oats, coconut, chia and sesame seeds.
Spread oat mixture onto your prepared baking sheet and use a spatula to flatten it down.
Bake for 20 minutes, stirring halfway through.
Remove from oven and move to a wire rack to cool.
Add the candied ginger and cashews and tamp down the granola to help it come together and create more clumps.
Cool completely, break up into clusters and store in an airtight container.
