Sourdough Banana Snack Cake

It’s almond milk!

Sourdough meets banana cake and two magical worlds collide.


Yields: About 20 squares

1 c sourdough starter

1 c flour

½ c oats

½ c brown sugar

2 medium eggs

½ c coconut oil

3 medium mashed bananas (1 1/4 cup)

1 tbsp ground flax seed

1 tsp cinnamon

1 tsp salt

1 tsp baking soda


  1. Cream together the coconut oil and sugar.

  2. Add one egg at a time and incorporate.

  3. Slowly fold in the mashed banana and sourdough starter.

  4. Sift dry ingredients together (except oats).

  5.  Slowly add wet to dry.

  6. Add oats.

  7. Spread in a square baking dish and bake for 45 minutes until toothpick or knife inserted in the middle comes out clean.
