Sourdough Banana Snack Cake
Sourdough meets banana cake and two magical worlds collide.
Yields: About 20 squares
1 c sourdough starter
1 c flour
½ c oats
½ c brown sugar
2 medium eggs
½ c coconut oil
3 medium mashed bananas (1 1/4 cup)
1 tbsp ground flax seed
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
Cream together the coconut oil and sugar.
Add one egg at a time and incorporate.
Slowly fold in the mashed banana and sourdough starter.
Sift dry ingredients together (except oats).
Slowly add wet to dry.
Spread in a square baking dish and bake for 45 minutes until toothpick or knife inserted in the middle comes out clean.
