Chia Seed Tuna Salad
Sub chia seeds for traditional mayo for a healthier, whole foods version of classic tuna salad.
Yields: 1 serving as main, 2 as a side
1 can tuna in water, reserve juices
1 tbsp chia seed
1 tsp sweet relish
1 tbsp lemon juice
½ tbsp capers
¼ green apple, finely chopped
¼ cup finely chopped celery
1 small squirt dijon mustard, yellow mustard and spicy brown mustard
Open your can of tuna and add tuna to one bowl and juices to another bowl.
Add chia seed to the bowl with the juices, along with the lemon juice, sweet relish and capers.
Mash the avocado and add to the tuna bowl.
Add the green apple, celery and mustard. Don’t mix yet!
Once the chia seeds have gelled, add the chia mixture to the tuna.
Mix well until just combined.
Let chill completely, then use as you desired.
