Tahini Shirataki Noodles
Low cal shirataki noodles smell really fishy but they’re actually really tasty. You just gotta add the right stuff. Like this simple vegan tahini sauce.
Yields: 1 main serving or 2 servings as side
Coconut oil spray
1 package Shirataki noodles
2 scallions, chopped
½ cup sliced white mushrooms
½ tbsp fresh ginger, minced
1 tbsp rice vinegar
1 lime juiced
2 tbsp tahini
1 squirt sriracha
1 tbsp coconut aminos
1 tbsp sesame seeds
Drain shirataki noodles well.
Spray a sauté pan with coconut oil spray.
Add ginger and scallions.
Cook until fragrant, 5 minutes.
Add mushrooms and rice vinegar.
Cook 3 minutes more until cooked down.
Add noodles followed by lime and coconut aminos.
Toss well and cook 1 minute.
Turn off heat and add tahini and sriracha to taste.
Toss well and garnish with sesame seeds.
Serve cold or hot.
