Za'atar Breakfast Bagel

Za’atar is a popular spice mixture hailing from the middle east. It’s commonly mixed with olive oil and used as a spread on flatbread or pita. This simple, balanced breakfast takes your standard bagel breakfast up a notch. I’ve added some * to notify you of tips/tricks I’ve included at the bottom.

Ingredients:
Yields: 2 open face breakfast sandwiches

1 whole wheat bagel

2 tbsp cream cheese

1 tbsp Za’atar

½  lemon juiced

4 cup fresh spinach

2 eggs prepared to your liking (fried, soft boiled, scrambled, etc.)

Directions:

  1. If your bagel isn’t *perfectly* fresh, toast it.

  2. Spritz a pan with olive oil and cook the spinach until wilted. Also this would be a good time to prepare your egg.

  3. Place the cream cheese, za’atar in a small bowl.

  4. Squeeze lemon juice in with a lemon squeezer*.

  5. Whisk together.

  6. Take your toasted bagel and schmer the za’atar cream cheese mixture on top.

  7. Pile on the spinach (and the egg if desired) and consume ASAP*.

Tips/tricks:
The spinach will make the bagel soggy so definitely eat this asap. You don’t have to eat it fast just don’t wait to enjoy.

If you have a lemon press I’ve found that once you squeeze the lemon flesh first flip it over to the skin side and press again. You’ll get twice as much juice as you normally would.
