Pressure Cooker Lentil Spinach Soup

The easiest soup I’ve ever made. I don’t have an InstaPot, I have your standard electric pressure cooker but you can make the same recipe with an InstaPot no problem.

Ingredients:
Yields: 6 servings

About 10 ounces dried brown lentils

1 c chopped carrots

1 1/2 c chopped celery

1 tbsp minced ginger

2 tbsp tomato paste

1 tbsp apple cider vinegar

1 package frozen spinach (380 grams)

4 c vegetable broth

1 ½ c light coconut milk

Garnishes (optional): nutritional yeast, parmesan cheese, chopped parsley, sour cream

Directions:

  1. If desired, saute carrots, celery and ginger together in 1 tsp olive oil on stove top until slightly caramelized. No, I don’t have that fancy InstaPot feature that you can saute on.

  2. Add all ingredients into pressure cooker.

  3. Lock tightly and cook on HIGH for 30 minutes.

  4. Release pressure naturally and unlock.

Serve with desired garnishes  - nutritional yeast, parmesan cheese, chopped parsley, sour cream - all divine.
